Lentil burgers

Components


three/4 cup brown lentils, rinsed, strained and picked via


one three/4 cups plus 1 tablespoon reduced-sodium vegetable broth or water


2 teaspoons further-virgin olive oil


1 big red onion, half finely chopped and half thinly sliced


Juice of 1/two lemon


eight ounces fresh infant spinach


2 huge cloves garlic, minced


Freshly ground black pepper


1/2 teaspoon ground cumin


1 cup whole-wheat breadcrumbs


1/two cup walnuts, toasted and finely chopped


six complete-grain vegan hamburger buns


Little one arugula, basil, roasted red bell peppers and spicy mustard, for serving, optional
